Chocolate Dipped Frozen Bananas

What you'll need:
2-4 semi ripe bananas
- parchment paper
- 2 cups semi sweet chocolate chips, melted
2 Tablespoons butter or coconut oil
1/2 cup roasted unsalted almonds, chopped
Line the cookie sheet with the parchment paper. Gently peel and cut the bananas in half. Insert each half with a popsicle stick. Place the bananas on the cookie sheet. Freeze for at least 5 hours or overnight if you have time. Melt the chocolate chips with the butter or coconut oil in the microwave in 30 second intervals paying attention not to burn it. I prefer to use a double boiler to ensure a smooth even melt. Pour the melted chocolate into a tall heat safe glass or jar. It will make dipping the frozen bananas easier. When the bananas have fully frozen, remove from the freezer and dip each one into the chocolate and then roll in either chopped nuts or sprinkles. Make sure to work quickly to prevent the chocolate from hardening too fast. Return the bananas to the parchment lined cookie sheet and freeze for an additional 5-10 mins. They are ready to enjoy and will keep in a zip lock bag for about a week in the freezer.
