Tuna Stuffed Avocados
The witching hours. Crunch time. I'm talking about the hours between 3-8pm aka ravenous little men and possibly a very "hangry" me! It's homework, it's snack time, it's dinner prep, and possibly rushing off to basketball practice or dance class. There was a time when milk and cookies or veggie sticks would do the trick but those days are long gone. My pre-teen and teenage boys aren't having it and quite frankly neither am I. We basically needed a pre-dinner before our homework and activities to get us through.
Not only are these super easy to make, they're also a really healthy after school snack for you or the kiddos. The key is to use really good quality tuna. I used Bumble Bee wild caught Albacore. It's non GMO and made with Sea Salt. Makes all the difference! It's a perfect protein punch in the middle of the afternoon to give you the brain boost that you need. It's great for lunch too! Put the phones away and set up the homework. It's mommy or daddy after school snack time...
Here's what you'll need:
- 1 can Tuna (packed in water)
- 1 Avocado (Scooped out and roughly chopped)
- 1/4 cup chopped cilantro
- juice of one lime
- 1 Tablespoon finely chopped red onion
- 1 Teaspoon finely chopped jalapeño
- 1/4 cup finely chopped sweet red pepper
- 1/4 cup finely chopped celery
- 2 Tablespoons extra virgin olive oil
- Salt and pepper to taste
Drain the tuna and combine with the vegetables and cilantro.
Add the chopped avocado, lime juice, and olive oil. Mix until all of the ingredients are well combined. Season with salt and pepper to taste.
Spoon the tuna mixture into the hollow avocado skins. Enjoy immediately!
