Fro-yo Bark with Berries, Orange zest and vanilla
Really impressed with how these came out. The perfect mid-day, protein pick me up. The tangy and sweet frozen yogurt with the tart frozen berries hits the spot straight out of the freezer after school. Greek yogurt is naturally pretty tart on its own so feel free to add more sweetener or honey if you like. Just try to use really thick, full fat yogurt as it freezes and holds up better. Make it vegan with a really thick coconut yogurt! The orange zest and vanilla bean give this snack an almost decadent flavor. I even eat it for breakfast after the gym...
What you'll need:
- 2 cups Greek Yogurt or Thick Coconut Vegan Yogurt
- 1/2 cup honey or agave
- 2 teaspoons orange zest
- 1 Vanilla bean (soaked and scraped)
- 1 teaspoon vanilla extract
- 1 pint fresh raspberries
- 1 pint fresh blueberries
- 1/2 cup fresh strawberries chopped
- 1/4 cup pistachios
Combine the yogurt, honey or agave, orange zest, vanilla beans, and vanilla extract in a medium bowl. Spread yogurt mixture over parchment paper on a cookie sheet. Top with berries and pistachios. Freeze for at least 4-6 hours. Cut into 3-4 inch pieces with a sharp knife. Eat immediately or store in freezer zip lock bags for up to 2 weeks in the freezer.
